Healthy Toddler Approved Vegetable Muffins

Do you ever feel like you’re stuck in a rut trying to come up with healthy toddler approved foods and snacks?? I sure do! And sometimes just when you find something that your toddler loves, he/she decides not to love it so much anymore.

My toddler (like most) loves fruits and most veggies, but its hit or miss. One day he loves carrots, the next day…no way! Overall he’s a very good eater, so I’m certainly not complaining, but it does get challenging sometimes when I want to be sure he’s eating all food groups and a rainbow of colors.

These 2 muffin recipes have been a consistent hit with my toddler. He gobbles them down with no hesitation. They make the perfect snack, whether at home or on the go. And they are made with veggies!!! Skip to recipes below: Carrot Zucchini Mini Muffins & Banana Berry Spinach Mini Muffins

These healthy vegetable toddler approved muffins are also easy to whip up and make it a great activity to actually include your toddler. Toddlers want to do everything you do and really can be good helpers. Some days it takes more patience than others, but its totally worth it! Grab all your ingredients ahead of time, pull up a helper tower or chair for your toddler and get to mixing!


Carrot Zucchini Mini Muffins

  • 1 c all purpose flour
  • 1/2 tsp salt
  • 1 tsp baking soda
  • 1 tsp cinnamon
  • 1/2 c unsweetened applesauce
  • 1 egg
  • 1 tsp vanilla
  • 1 c grated zucchini
  • 1 c grated carrot
  • 1/2 c raisins
  • 1/4 c chia seeds
  1. Preheat oven to 350 degrees. Grease or line mini muffin tins.
  2. Mix dry ingredients in bowl: flour, salt, baking soda and cinnamon.
  3. Mix wet ingredients in bowl: applesauce, egg and vanilla.
  4. Add wet to dry and stir until combined.
  5. Stir in zucchini, carrots, raisins and chia seeds.
  6. Fill cups 3/4 full and bake 17-22 minutes, or until toothpick comes out clean.
  7. Makes approximately 30 mini muffins.

Banana Berry Spinach Mini Muffins

  • 1 c flour
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1/2 c banana (approx 1/2 large banana)
  • 1/2 c blueberries
  • 1/2 c spinach leaves
  • 1/3 c unsweetened applesauce
  • 1 egg
  • 1 tsp vanilla
  1. Preheat oven to 375 degrees and grease or line mini muffin tins.
  2. Mix dry ingredients in bowl: flour, baking powder, salt.
  3. Blend (in blender) banana, blueberries, spinach and applesauce.
  4. Add blended puree to egg and vanilla.
  5. Add dry to wet and mix just until incorporated.
  6. Fill cups 3/4 full and bake 10-15 minutes, or until toothpick comes out clean.
  7. Makes approximately 30 mini muffins.

Hint: I always keep frozen blueberries and ripe bananas (peeled and cut in half) in the freezer for smoothies. It works just fine to use these ingredients frozen, you may just have to blend them a tad longer.


Easy to Store in the Freezer

These healthy vegetable toddler approved muffins are great for making in batches and storing in the freezer. You can take them out the night before and thaw in the fridge or take them out in the morning and thaw at room temperature. But lets be honest, how often do you remember to do that?! They also reheat easily in the microwave right at snack time, just be careful for hot spots in the muffins!
